Do you remember Freda Kelly’s Tea Biscuits?

Freda Kelly lived a remarkably good life in so many ways. She was filled with kindness, and her generosity towards others was a big part of what kept her going. Freda loved to bake, and she loved to share all of her wonderful creations with her friends. Over the years she shared countless tea biscuits.

Freda Kelly enjoyed tea at Maryboro Lodge, and even in her late nineties walked down to the museum for these Wednesday afternoon gatherings. Her vibrant spirit was much appreciated by everyone present. In memory of Freda Kelly, Maryboro Lodge will be serving her tea biscuits this summer.

Afternoon Tea is from 1 to 4 pm, each Wednesday in July and August. The schedule is available online:

Recipe

Mix 1/2 tsp. baking soda in 1 cup buttermilk

       or sour milk (set aside)

2 cups all-purpose flour

1/4 cup sugar (optional)

2 heaping tsp. baking powder

1/2 tsp. salt

1/4 cup shortening (blended in with pastry blender)

Pour in liquid mixture. Mix lightly and roll out.

Cut in biscuits and cook for 10 minutes in 450

degree oven.
