Freda Kelly’s Tea Biscuits

An inspiration to practically everyone who new her for 100 years, few others have combined the kindness, generosity and vivacious spirit that characterized Freda. She married the nephew of the Abbott sisters who operated Maryboro as a tourist lodge and spent many years helping the museum as well as many other community organizations. Freda loved to bake, and she loved to share all of her wonderful creations with her friends. Over the years she shared countless tea biscuits around the village. Freda Kelly enjoyed tea at Maryboro Lodge, and even in her late nineties walked down to the museum for these Wednesday afternoon gatherings. Her vibrant spirit was much appreciated by everyone present.
Ingredients
- 1/2 tsp. baking soda
- 1 cup buttermilk or sour milk
- 2 cups all-purpose flour
- 1/4 cup sugar (optional)
- 2 heaping tsp. baking powder
- 1/2 tsp. salt
- 1/4 cup shortening (blended in with pastry blender)
Directions
- Mix baking soda into buttermilk or sour milk.
- Mix flour, sugar, baking powder and salt.
- Add shortening and blend in with pastry blender.
- Pour liquid mixture. Mix lightly and roll out.
- Cut in biscuits and cook for 10 minutes in 450 degree oven.
